Slow Cooker Stuffed Peppers

Slow Cooker Stuffed Peppers (Freezer-Friendly!)

Yields: 4 servings

Ingredients

  • 1 tablespoon olive oil
  • 1lb+ ground turkey (or beef)
  • 1 onion, peeled and diced
  • 1 garlic clove, minced
  • 4 small bell peppers, tops cut off (or 2 large peppers, cut lengthwise) and cleaned
  • 24oz jar of your favorite pasta sauce (reserve 2T)
  • 1/2 cup water
(I will add to the ingredients to make 6 servings)

Directions

  1. Coat bottom of slow cooker with 1 tablespoon of olive oil.
  2. In large bowl, mix ground meat, onion, garlic, and 2 tablespoons of pasta sauce.
  3. Separate mixture into four equal parts and firmly stuff into peppers.
  4. Place peppers in slow cooker and cover with remaining pasta sauce.
  5. Pour 1/2 cup of water into the empty sauce jar, shake it up and pour into slow cooker. (I don’t like to waste anything!)
  6. Cook on low for 6-8 hours or until meat is cooked through and peppers are soft.

Baked Tortellini

Ingredients: -1 bag of frozen cheese filled tortellini (19 or 20 oz) -1 jar of alfredo sauce (15 oz) -1/2 jar of marinara sauce -1/2 cup shredded mozzarella -1/2 cup (grated or shredded) Parmesan cheese Preheat the oven to 350. Cook the tortellini according to package directions. Mix with the alfredo and marinara sauce in an 8x8 baking dish. Top with mozzarella and parmesean. Bake for fifteen minutes Then broil for five minutes to get a nice bubbly and golden topping. Serve immediately. (I double this recipe because this one is only for an 8 x 8)
Label: Tortellini Bake - Cook the tortellini according to package, mix in bag with sauces.  Top with cheese. Bake 15 mins & broil 5 mins.

Cheese Potato Soup

Cheesy potato soup: 1 package cubed frozen hashbrowns 2 cans cream of chicken 1 can cream of celery 1 pint half&half 1&1/2 cups grated cheese 1/2 cup butter (If you are doubling the recipe, don't increase the butter!) salt and pepper to taste ( I add canned or frozen corn as well cuz I LOVE corn in potato soup!)Melt the butter in crockpot first. Add all ingredients to crock pot except cheese and salt and pepper. Cook on high for about 4 hours. Add 1 cup cheese, salt and pepper before serving. Use reserve cheese to sprinkle on top.
