Chicken Enchiladas
2lbs chicken cooked
and shredded
2 c cheese
2 c cooked brown rice
1 can black beans
½ onion
10 tortillas
1 can enchilada sauce
Label: To bake from frozen. Preheat oven to 400 degrees.
Remove foil and plastic wrap from baking dish; pour sauce over enchiladas;
sprinkle with cheese; cover with foil. Bake 30 minutes; remove foil (check to make sure it's warmed through), and bake
until bubbly, about 15 minutes more. Cool 5 minutes before serving.
